Black tea is an arbor plant of the Camellia family . Its branches are relatively upright with few branches. The tree is about 8 meters tall. The young buds and leaves are green and have no or very little hair. Black tea has strong buds and thick leaves. The leaves are yellow-green in color and have red spots on the stems and leaves. They are thick and strong in strip shape. The picking time is around mid-to-late June every year. During the Jiajing period of the Ming Dynasty, Anhua, Hunan Province, used the method of stacking wet green tea leaves and drying pine wood over an open fire to make the tea black and brown, hence the name black tea.

Dark tea is a post-fermented tea, which is unique to China and has a long production history. It is produced in Yunnan, Hunan, Hubei, Guangxi and other places in China. Tea trees like humid and rainy climates and grow mostly in mountains and forests. They can be planted in acidic soil. The propagation methods of tea trees include seed propagation, short spike propagation, tissue culture, grafting, layering, division, etc.

brewing method

  1. Warming cups: Rinse the prepared clean utensils again with boiling water. On the one hand, it is for the sake of hygiene, and at the same time, it also warms the bowl, male cup and tasting cup.
  2. Pour the tea: Pour the black tea to be brewed into the tureen. The amount of tea added, or the ratio of tea to water, has a great influence on the entire tea brewing. For a tureen of about 100cc, we recommend adding about 5 grams of tea.
  3. Moisten the tea: Pour boiling water into the tureen where the tea leaves are put, and wash the tea once or twice to allow the tea leaves to fully wake up and stretch out. It is not recommended to drink the tea soup that moistens the tea. Warm the cup and pour it out or pour it out directly. Please pay attention to the speed and angle of water injection. The speed of water injection will affect the temperature of the water. If the water is injected quickly, the temperature will be high. If the water is injected slowly and the water flow is fine, the water temperature will be relatively low. Appropriate adjustments must be made according to the different characteristics of the tea being brewed.
  4. Making tea: When making tea, pay attention to the timing of the soup. If the soup is made too quickly, the tea soup will be thin, and if the soup is made too slowly, it will be too strong.
  5. Divide cups: Divide the tea soup brewed through the filter into tasting cups for everyone to share. Be careful not to fill the tasting cups too full. "Tea and wine are half full", no more than seven points at most. This is an etiquette of the Chinese tea ceremony. As the saying goes, "Respect others when you are full of wine, but you are deceived when you are full of tea."
  6. Tea tasting: Three sips are considered tea tasting, which means drinking slowly and slowly in small sips. If it is hot, the thin layer of tea soup on the surface of the sip cup will be the lowest temperature in a cup of Pu'er tea. Whether you are making tea or making tea, time control is very important.
