White tea, a slightly fermented tea, is a special treasure among Chinese teas. It is named because the finished tea is mostly buds , covered with white hair , like silver and snow. One of the six major tea categories in China.

White tea is not cured or rolled , but is processed only by sun or slow fire drying. It has the quality characteristics of intact buds, full body, fresh aroma, clear yellow-green soup, and light and sweet taste.

The main white tea production areas are Fuding , Zhenghe , Zhelong in Fujian, Xinzhou Old Street in Wuhan , Tianshan in Jiaocheng, Songxi , Jianyang , Jinggu in Yunnan and other places. The basic process includes withering , baking (or drying in the shade), picking , refire and other processes. The Yunnan white tea process mainly involves sun-drying . The advantage of sun-drying green tea is that the taste maintains the original fragrance of the tea. Withering is a key process in forming the quality of white tea.
